Ground Chicken Kimpira (Gobo) With Watercress

1-2 lbs Chicken (chopped)
1 10-oz. package of prepared Gobo (burdock in the frozen foods section)
1 large carrot, peeled and cut into matchstick - sized pieces
1 bunch of watercress, chopped
2 cloves of garlic, chopped
1 medium onion, sliced
2 tbsp. oil
2 tbsp. shoyu
1-1/2 tbsp splenda
1 tsp crushed red pepper

1) In a large frying pan, add oil and fry the chicken, garlic and onion
2) When the chickn is browned and cooked, add the gobo and carrots and cook for 10 to 15 minutes.
3) Mix the shoyu and splenda and add to the chicken.
4) Add the watercress and crushed pepper
5) Cook until watercress is done but still crispy.

Enjoy with small portion of cooked brown rice or other whole unprocessed grain.
